Balsamic Vinaigrette
I love balsamic vinegar for it’s slightly fruity sweetness. When shopping for balsamic vinegar, look for one from Modena. Don’t confuse regular balsamic for the very expensive aged vinegars labeled “Aceto Balsamico Tradizionale” that are sold in small, shapely bottles. These thick syrupy, rich vinegars are used more as a condiment- poured over grilled meats, antipasti, fruit, and even ice cream.
3/4 cup good quality extra virgin olive oil
1/4 cup balsamic vinegar
1 clove garlic minced
1 t dijon mustard
salt and pepper to taste
Place the mustard, vinegar,garlic and salt and pepper into a glass bowl. Slowly pour in the olive oil while whisking all the time. Adjust for acid and seasonings.
