Claire’s Recipe

This recipe was passed on to my dear friend, Claire, from her mother, Fran. It has travelled to China with Emily, Italy with Naomi, and Zambia with Leah.  Since 1997,it’s a regular on Christmas morning in our house.



2 cups flour                                

3 very ripe bananas-mashed

1 t. baking soda      

2 eggs- room temp

1/2 t. salt      

3/4 cup sugar

1/2 cup butter- room temp                  

1/2 t vanilla

1 cup chopped walnuts or pecans (optional)


Preheat oven to 350 degrees.  Sift dry ingredients together.  Cream butter and sugar together till light and fluffy.

Add eggs, beat well. Add vanilla and bananas, then combine dry ingredients, and mix well. Pour batter into a well greased loaf pan and bake for about an 45 minutes. If you want to make mini loaves- it will make 3 and The baking time is about 25 minutes.

Variation: add a half cup of mini chocolate chips to the batter- who doesn’t like a little chocolate first thing in the morning?
