BANANAS FOSTER

This popular New Orleans dessert is amazingly easy to make. I keep those little bottles( 3 inch) of banana rum on hand- for a quick last minute dessert- as we almost always have bananas and vanilla ice cream on hand.
2 T unsalted butter
3 T brown sugar
1/2 t cinnamon
2 bananas sliced in half crosswise and then lengthwise
1/4 cup banana rum
scoops of vanilla ice cream
Melt the butter in a large skillet over low heat. Add the sugar and cinnamon and mix well. Put the bananas in the pan and cook until they turn soft and look golden. This only takes a minute or so. Be careful as this sauce is burning hot with the sugar- butter mixture.
Pour the banana rum over the bananas and carefully tilt the pan to ignite the liquor. Keep tipping the pan in a circular motion to distribute the flame and allow the flame to burn out.
To serve the dessert- divide the bananas and place half each on deep plates or bowls- top with a scoop of ice cream and spoon the sauce on top. Sprinkle the plate with a little cinnamon. The ice cream starts to melt and blend with the sauce as you eat it. Yum.
