BASIC CREPE BATTER
about 12 crepes
You will need a non-stick pan with shallow sides to make these tasty French pancakes

1 cup flour
pinch of salt
1  1/4 cups milk
2 eggs
2 T  melted butter that has cooled somewhat
extra butter for cooking the crepes








In a mixing bowl beat the eggs with the milk, add the flour and salt and mix well, Next, add the melted butter and stir till everything is combined. This can be done in a blender if you like.
If time allows refrigerate the batter for an hour.
Place about 1/2 t of butter in the pan place on med- hi heat. Swirl the butter around until it has melted and coated the pan. The pan is hot and ready when a tiny splash of water skips across the pan.
Ladle in about 2 T of the batter- twirling the pan so the batter moves around  and forms a circle. The batter will start to dry before your eyes- and when it no longer looks moist you can flip the crepe( about a minute) cook on the other side for 20-30 seconds. 
Slide the cooked crepe onto a plate. Add more butter and repeat. You can now start building a stack of crepes. Fill with your favorite fillings- sweet or savory.http://www.happyinthekitchen.com/Site_2MarciasKitchenHome/Site2/Marcias_Kitchen_Home.html
