BLACK BEAN SALAD                    back to home                             

serves 8-10

This flavorful, colorful, salad, with its crunch of fresh vegetables and tangy lime dressing is a great addition to a buffet- and it can be made well in advance.

Two 1 # cans black beans drained and rinsed- i like “Progresso”

1 red bell pepper- fine chopped

3 celery ribs- fine chopped

1  cup fine chopped red onion

1 cup cooked fresh corn kernels

1/3 cup olive oil

1/2 cup fresh lime juice

zest of one lime

1  t kosher salt

3/4  t fresh ground black pepper

2 T  fresh torn cilantro leaves

Whisk the olive oil, lime juice,zest, salt and pepper together in a bowl until well combined. Set aside while you prep the veggies.

Add the rinsed beans to a large bowl. Add all the chopped veggies and toss with the lime dressing. Refrigerate for a few hours to let the flavors combine. Serve cold or room temp- garnish with cilantro sprigs.
