BUTTERMILK PANCAKES

makes about eight medium size  pancakes

This recipe comes from my dear, sweet Aunt Edna, one of the kindest people I’ve ever known. She was a wonderful cook, but this is the only recipe i have of hers and i cherish it as i do her memory. Try sprinkling blueberries or sliced banana rounds on top before flipping.


           1 cup all purpose flour

             1 T sugar

           1  1/2 t baking powder

             1 cup buttermilk

          1/2 t baking soda

             1 large egg beaten

          1/2 t salt

            1 T vegetable oil

             blueberries or bananas
















Sift together dry ingredients. Combine buttermilk, egg and oil. Add to the dry ingredients all at once.  Stir until well combined.

Bake on a lightly greased med high heated griddle. Flip when bubbles form on top. Serve with sweet butter and real maple syrup.
