CAESAR SALAD                         back to home

My daughter went through a phase long ago when we ate out she always got the same thing: chicken caesar salad.We often vary this classic salad by adding some grilled chicken and roasted cherry tomatoes.


Hearts of Romaine washed, dried and torn or cut into ribbons

lots of fresh grated or shaved Parmigiano-Reggiano

fresh ground black pepper

Caesar dressing

croutons or parmesan crisps



Chill the salad bowl or plates in the freezer for a half hour or so before making the salad. Toss the Romaine and the cheese together in the chilled bowl. Pour the dressing on the sides of the bowl, not directly onto the greens, and then toss well to coat every leaf. Finish with a good grinding of black pepper and croutons if desired.
