1 whole roasted chicken,deli or self roasted

1 large Granny  Smith apple cut into small chunk    

3 scallions thin sliced

1 rib celery (green heart) finely chopped

1/2 cup red onion finely chopped

3/4 cup cashews, whole or halved

1 heaping cup red or green seedless grapes- or a combo

1/2 jar Stonewall Kitchens Old Farmhouse Chutney*

3/4 cup Delouis Fils Fresh French Mayo- or Hellman’s

kosher salt and fresh ground pepper

Shred the chicken, discarding any fatty stuff and skin into bite size pieces. Sometimes I just use the breast meat for a more elegant presentation. Season lightly with salt and pepper. Pour any de-fatted roasting juices over the chicken and refrigerate until cool.

When cool, add the chicken into a mixing bowl. Add all the ingredients, and lastly, the mayo and chutney.  Refrigerate for a few hours to let the flavors combine

* If you can’t find Stonewall Kitchen’s Old Farmhouse Chutney- any good chutney will do.
