1 cup jasmine rice- not rinsed

1  1/2 cups “lite” coconut milk

1/2 cup water

1/4 t salt

toasted coconut

In a medium saucepan bring the coconut milk, water and salt to a boil and stir in rice. Reduce heat to moderately low and simmer rice uncovered until most of the liquid is absorbed, about 15 minutes. Remove pan from the heat and let rice stand, covered, about 5 minutes. Serve rice with sprinkled with toasted coconut.

To toast the coconut: Heat a skillet to med high heat. Add sweetened flaked coconut in a single layer- continually stir the coconut so as not to burn- cook until golden brown. This just takes a few minutes.

                         I use a rice cooker for most of my rice dishes. Add a little less liquid when doing so.
