CREAMY COLE SLAW                    back to home

I’m not crazy about cabbage- but sometimes a creamy cole slaw is called for - as in a crunchy yet creamy topping for pulled pork sandwiches. I use a 1 mm Cuisinart slicing blade to get the thin little cabbage ribbons. But, if you don’t have that use your sharpest knife and slice as thin is you can.


1/2 head green savoy cabbage-rinsed,cored, and sliced as thin as possible

1/2 head red cabbage- rinsed, cored, and sliced as thin as possible

1 large carrot- shredded

1/2 red onion- sliced as thin as possible into half circles

1 tsp salt

1/2 t white pepper

2 t celery seed

2 t sugar

about 1/2 cup mayo- more or less as desired


Mix everything together and refrigerate for a few hours to let the flavors meld. Adjust for seasoning and creaminess before serving
