OATMEAL CHOCOLATE CHIPS
makes about 60 cookies
This recipe comes from my dear friend Claire, handed down from her mom, Fran, who got it from a church cookbook in the 50’s or 60’s. They have stood the test of time in their family, and now will in ours. These are crispy,crunchy, cookies- begging to be dipped.
1/2 cup butter
1/2 cup solid shortening
1 cup brown sugar
1 cup sugar
2 eggs
1 1/2 cups flour
1 t soda
1 t salt
3 cups quick oatmeal
12 oz. chocolate chips
1/2 cup coconut
Preheat oven to 325.
Cream sugars and butter/shortening thoroughly. Add eggs and mix well. Add flour, salt, and soda. Combine. Last, add oatmeal,coconut and chocolate chips.
Drop from teaspoon- 2 inches apart on to a non-greased cookie sheet. Bake for about 20 minutes, until lightly browned.
