CURRIED COUSCOUS SALAD


1  1/2  cups couscous

1 tablespoonunsalted butter

1  1/2 cups boiling water

1/4cupgood olive oil

1teaspoon white vinegar

1teaspoon curry powder

1/4tablespoon tumeric

1teaspoon kosher salt

1teaspoon fresh ground black pepper

1/2cupgrated or small diced carrots

1/4cupminced parsley

1/2cupgolden raisins  plumped in hot water to soften

1/2 cup pistachio nuts

3 scallions- white and green thinly sliced

1/4cupsmall diced red onion


Place couscous in a medium bowl. Melt the butter in the boiling water and pour over couscous.  Cover tightly and let sit for 5 minutes.

Gently fork the couscous into a larger bowl- separating the grains.

Whisk together the oliver oil,vinegar, and seasonings. Pour over the  forked couscous and mix well.  Add the rest of the ingredients and adjust for seasonings.

Can be served warm ,room temp, or cold.                                                                                                                     back to home
