Daikon Radish Relish


1  Japanese Daikon radish, peeled and fine shredded- yield about  1 cup
2 T fine shredded carrot
cilantro-  about a dozen leaves- torn to bits
3 T rice vinegar
1 T sugar
1T soy sauce
few droplets sesame oil








After shredding the radish - gently squeeze out the juice.  Put the shredded radish into a glass bowl and combine with the other ingredients. Refrigerate for a few hours to allow the radish to “pickle” a bit. Serve with satays as a condiment.
