GREEK SALAD VARIATIONS            back to home

Traditional Greek salad is a combination of juicy tomatoes, crisp cucumber, sliced red onion,  crumbly feta cheese and plump kalamata olives tossed together with a with a lemon vinaigrette. To make it more of a one dish meal I change it up a bit with some penne pasta and baby spinach. Or, sometimes go even further and add some grilled chicken into the mix. A perfect summer night supper- along with some crusty bread and a glass of vino!


for the salad:

3 ripe tomatoes,seeded and diced or 1 cup cherry tomatoes halved

1 medium cucumber peeled, seeded and sliced into half moons

1/2 red onion thin sliced

4 ounces crumbled feta cheese

20 kalamata olives


optional ingredients:

1/ 1/2 cups cooked penne pasta

1 1/ 2 cups loose baby spinach

2 chicken breasts grilled and cut into bite size pieces


for the vinaigrette:

4 T olive oil

2 T fresh lemon juice

1 clove minced garlic

1/2 t dried oregano

pinch of kosher salt and a grinding of black pepper

Place everything in a jar with a lid and shake well.


Place all the prepped salad ingredients in a bowl and toss with the vinaigrette.  If you want to add any of the other variations you may want to make a little extra vinaigrette- especially if you are adding pasta.
