HOMEMADE CROUTONS


Left over french bread- cut roughly into 1” cubes

olive oil

fresh grated parmesan  cheese


Put the bread in a baggie drizzle a little olive oil over the bread cubes- you want just a light coating. Mush and move around the bread crumbs from the outside of the bag- to distribute the oil.

Lay in a single layer- not crowding them on a metal baking sheet.

Bake in a 400 degree oven for about 5 minutes. Stir them around and bake for a few more minutes.

Remove from oven and generously sprinkle the cheese over the croutons- return to the oven for a few more minutes until golden and until the cheese has melted.

There will be little bits of cheese stuck to the pan- be sure to toss this into the salad as well- for added crunch.
