These are fun and easy and I love to put the kids to work making them. Look for a somewhat sturdy cookie that can stand up to the pressure of a little squeeze. Here are 2 of my  favorite varieties- use your own creativity when making these. Shown here are cookies and cream ice cream on chocolate mint wafers and peach ice cream on a Belgian wafer cookie. 


good quality ice cream- Haagen Dazs- Ben and Jerry’s for example

cookies of choice- suggestions below 

                                              















Take the ice cream out of the freezer 10 minutes or so before assembling them- if it is rock hard.

Using an ice cream scoop- scoop out the correct amount to fit on your cookie. Gently put on the top and hold it in the air- and apply pressure on both the top and bottom of the cookie- give it a gentle even squeeze. Repeat. If things get too melty stick them on a flat tray and back into the freezer until they firm up or until ready to serve.
