This is a cheater recipe because it calls for a boxed cake mix and lemon curd in a jar. But the frosting is original.  The box says it will yield 24, but in reality it only makes about 12. Cupcakes just make me smile and these are pretty good and very easy to make.

1 white cake box- your choice4 oz cream cheese- room temp

12 t store bought lemon curd*1  1/4 cups powdered sugar

4 oz unsalted butter softened2 T fresh lemon juice


Make the cupcake batter according to the directions on the box. Fill muffin tins with paper liners. Fill the batter halfway, add 1 t lemon curd, and add the remaining batter. Don’t over fill. Bake according to box directions. Cool completely before frosting.

For the frosting, add the butter, cream cheese, lemon juice and powdered sugar into a bowl of an electric mixer and mix for about 2 minutes on low, until very smooth. Generously ice the cupcakes. Garnish with candied violets, or candied lemons, or edible flowers, such as, violets.
