Lemon Dressing

1/2 cup fresh squeezed lemon juice
1 cup good quality extra virgin olive oil
2 cloves garlic
Handful of fresh parsley- to yield about 2 T
kosher salt.

I like to make this with a food processor. Fit the work bowl with the steel knife. With the machine running drop the garlic and parsley through the feed tube. Process until everything is chopped pretty fine. Take the lid off and add the lemon juice, salt and half of the olive oil. Pulse a few times to combine.
With the machine running, slowly add the rest of the olive oil through the feed tube. You want it to be creamy, but not like mayo.  Adjust for salt and acid if necessary.
