Maple Mustard Vinaigrette

I’m usually not a fan of sweet salad dressings but our favorite local take out spot “Lucias To Go”  has a fabulous maple mustard vinaigrette- which i have tried to deconstruct here. It’s a nice winter dressing for a salad of mixed greens, thin sliced apples, cubed gouda, and pumpkin seeds. To make this ahead of time put the sliced apples (or pears) in the bottom of the serving bowl with the vinaigrette and build the rest of the salad on top- this keeps the fruit from browning- you can do this a couple hours in advance and keep in the fridge until time for tossing.


Whisk all this together until well combined - taste and then adjust to your liking- more syrup- more mustard,etc.



1/2 cup canola oil

3 T  maple syrup

3 T apple cider vinegar

2 T coarse mustard

1 t dijon mustard

pinch of salt

pinch of fresh ground black pepper
