MEATLOAF


                                                                                                                          serves 6
                                                                                             This is comfort food at it’s best!

1/2 # ground  lean veal				2 T parsley fine chopped
1/2 #ground lean pork				1 cup baby spinach, stems removed
1/2 # ground lean beef				1/2 cup bread crumbs
1/2 cup yellow onion diced fine			1/3 cup favorite BBQ sauce
2 large cloves garlic minced			1/2 t red pepper flakes
1/4 cup pine nuts					        1 t kosher salt
1 large egg beaten					1 t fresh ground black pepper
1 T olive oil						        2 T favorite BBQ sauce




Preheat oven to 350 degrees. Saute onion in olive oil till golden. Add the garlic and saute another minute. Set aside.  
In a mixing bowl add all the ingredients except for the 1/3 cup BBQ sauce. With your clean hands mix very well, making sure you get the 3 meats completely mixed together.
 Put the mixture into a baking dish and form into a loaf- poke the spinach to the inside of the loaf. With a large spoon make a slight indentation into the top of the loaf- this will help later to keep the BBQ sauce from falling off.
Cover with foil and bake for 30 minutes. Remove foil. Carefully pour off any fat rendered. Spoon the BBQ sauce over the top and sides. Return to oven- uncovered and bake for another 20 minutes. Let sit for about 5 minutes before slicing.
