ORZO SPINACH SALAD

This is a nice light winter salad. I almost never buy tomatoes in the winter- they never are any good so why bother? I like to use sun-dried tomatoes that are not packed in oil- usually found in a cellophane pouch. You have to re-hydrate them by plumping them in very hot water for a few minutes if you do use that kind. Otherwise, you can use the tomatoes that are packed in oil- and just use a little less olive oil if doing so.


1 1/2 cups dry orzo cooked according to package and then drained

6 cups baby spinach washed and spun dry

1 cup sun-dried tomatoes- julienned

juice of 1 lemon

2-3 T olive oil

kosher salt to taste


Mix everything together and then chill for at least 2 hours. The orzo absorbs the dressing pretty well- so you can adjust the lemon juice, oil and salt before serving.
