PASTA CARBONARA back to home

This is a one dish meal at our house- served with a full bodied red wine- of course. It’s also a great fall back meal- as the ingredients are almost always part of our pantry- so when the weather turns bad- or a late night meal is in order- it takes just minutes to whip up !
1/2 pound spaghetti
1/2 cup heavy cream
1/3 cup grated parmesan- plus more for serving
1/2 cup pasta water
1 egg beaten well
5 slices thick bacon -cooked crisp and torn into bits
1 T chopped parsley
lots of fresh ground black pepper
Bring a large pot of salted water on to boil. Put the cream in a saucepan and bring to a boil. Simmer until thickened somewhat- about 10 minutes. when starting to thicken add the 1/3 cup cheese. Stir well.
Add the spaghetti to the pot when it comes to a good boil- stirring frequently. When it’s al dente- remove 1/2 cup of pasta water before draining and add to the cream sauce.
Drain the pasta- and shake well to remove water. Add to a warmed pasta serving bowl. Toss in the egg and toss well with the hot pasta to cook it. Add the hot cream sauce and bacon and toss well. Sprinkle the parsley and fresh ground pepper and serve- with extra parm and pepper.
To keep things romantic eat out of the same bowl- in bed- with 2 forks- carbonara for deux- i saw this in a movie once!
Try topping off the pasta with a fried or poached egg for extra creaminess!
