make 2 dozen

1/2 cup light brown sugar

1/2 cup white sugar

1/2 cup butter- room temp

1 egg- room temp

1 cup creamy peanut butter

1/2 t vanilla

1  1/2 cups all- purpose flour, sifted

pinch salt

1/2 t baking soda

1/2 t vanilla

Preheat oven to 375 degrees. Cream the butter with the sugars and mix together very well. Beat in the egg, peanut butter and vanilla.

Sift the dry ingredients and add to the batter. Mix until well combined.

Roll the dough into small balls and gently flatten them onto a baking sheet that has been lined with parchment or a silpat. Press them flat with a fork, in both directions- making a cross hatch design.

Bake for about 12- 14 minutes or until they are just starting to brown a little. Cool on a rack.
