This recipe comes to me from my dear friend Claire. The first time i tasted them was many years ago at our annual neighborhood garage sale. Claire’s daughters, Emily an Naomi were selling them from the window of their backyard playhouse- where Claire kept replenishing hot from the oven- these easy and delicious muffins.
RHUBARB BRAN MUFFINS back to home
1 cup all bran cereal
1cup buttermilk
1egg
1/2cup vegetable oil
1 1/2cups flour
3/4cup light brown sugar
1teaspoon baking soda
1 1/2cups rhubarbchopped
Mix cereal and milk together to soften- 10 minutes. Add egg and oil. Combine dry ingredients. Add to bran mixture- add rhubarb- barely stirring. After filling muffin tins - sprinkle the top with cinnamon sugar. Bake in a 375 degree oven for 20- 25 minutes.
