SHRIMP SALAD WITH AVOCADO                             

4 servings

1 # large shrimp-peeled,de-veined, cooked and chilled

1/4 cup fine chopped red onion

1/4 cup fine chopped celery

2 ripe avocados

about 1 T fresh dill torn into little bits- more if you like

1/2 cup good quality mayo

zest of 1 lemon

2 T lemon juice

kosher salt to taste

Cut the avocados in half and remove the pits. Cut around 1/4 inch from the edge with a sharp knife to remove most of the flesh- leaving  just a little. If serving in the avocado cups take care not to cut the skin. Dice the avocado into bite size chunks. Sprinkle with the lemon juice. Set aside.

Mix all the other ingredients together- adjust for seasoning. Gently fold in the avocado. Put back into the avocado “cups”  Or plate the salad on  some fresh greens- or serve family style. Garnish with a little dill or lemon slice.
