1 # mostly cooked peeled and de-veined shrimp

1 cup fresh lime juice

1/2 cup favorite salsa

1 cup red bell pepper - large chopped

1 cup red onion - chinese cut

1 t kosher salt

1 t whole black peppercorns

cilantro sprigs

1 ripe Haas avocado  cut into bite size chunks















Cook the shrimp for no more than 2 minutes in boiling salted water- and then put them in an ice water bath.

Place the shrimp in a jar that has a tight fitting lid. Add all the other ingredients. Place in the fridge for a few hours and shake it from time to time. Serve cold in a glass bowl or serve individual servings in a martini glass for the perfect shrimp cocktail!

SHRIMP SEVICHE

A true Seviche would have the raw seafood “cooked “by the lime juice. I prefer to cook the shrimp a little less than normal and let the lime juice complete the cooking.
