SHRIMP SKEWERS                        back to home

This recipe is so simple and yet tasty. For parties ,I like to set up the little hibachi grill and let people grill their own. Serve with a mango salsa and tomato jam.



1 # shrimp-peeled, de-veined with tails on

wooden skewers that have been soaked in cold water for at least 1 hour

1 T melted butter mixed with 2 T lemon juice

mango salsa

tomato jam



For the shrimp marinade

juice of 2 lemons

3 cloves garlic

1 t red pepper flakes

1/3 cup olive oil

1/2 t each kosher salt and  fresh ground black pepper


Marinade the shrimp in the fridge for an hour or so.

Prepare the grill. Shrimp take very little time to cook- you want the coals hot, but low.

Thread the shrimp onto the wooden skewers - place them on the hot grill. Total cooking time if the coals are hot should be about 3 minutes- turning once.

Drizzle the shrimp with the butter/lemon juice and serve with condiments of your choice- i like the sweet/savory combo of a mango salsa and a tomato jam.
