Spinach and Artichoke Gratin


1  9 ounce	box	frozen chopped spinach	cooked -with water squeezed out
1	large	can(14 ounce) artichoke hearts	drained and rinsed
2	cups	jack or mozzarella cheese	shredded
1/2	lemon	juiced- about 3 T
      1 heaping	teaspoon dijon mustard	
dash	tabasco sauce	- to desired hotness
1/4	cup	mayonnaise	

Put the spinach and artichokes in a food processor. Pulse until well mixed.
 Add the cheese, juice, mustard, tabasco and mayo- pulse a few times to combine well. well. Taste for seasoning.
 You can microwave this to heat thru and melt the cheese- stirring several times. Or place in a gratin dish- sprinkle with some parmesan cheese  and bake at 375 degrees for about 25-30 minutes -until hot. Freezes well.
 Serve with tortilla chips for dipping, or spread them on crostini.
