SPRITZ COOKIES
This recipe comes from my dear friend Claire who supplies our house with wonderful Christmas cookies every year. I’m not very good with a cookie gun so when i make these i stick with making candy canes only- which seem to be the easiest. These are Santa’s favorite on Christmas Eve.
1 cup unsalted butter
1/2 cup shortening
1 cup sugar
2 eggs, room temp
1 t vanilla
1/2 t almond extract
1/8 t soda
3 1/2 cups flour- sifted
sugar sprinkles
Preheat oven to 400 degrees. Cream butter/shortening in an electric mixer until very smooth. Add the eggs- one at a time. Mix on medium until well combined. Add the vanilla and almond extract. Mix well.
Add the dry sifted ingredients and mix on low until well combined. Divide the dough for adding the # of colors you want to make. Add the food coloring you want - just a little at a time and mix very well. You can always add more if you need to - you don’t want neon cookies.
Line baking sheets with parchment paper or silpats. Put dough into a cookie gun fitted with the chosen shapes. Press onto cookie sheet. Shake on sprinkles. Bake for about 7 minutes. Cool on a sheet for a couple minutes before transferring to a cooling rack.
Store in a cool dry place- will keep for several weeks.
