12 large medjool dates, pits removed

6 slices of bacon

12 marcona almonds

toothpicks


Cook the bacon until not quite crisp- so you can still wrap it around the date. Put an almond inside the date. Cut the bacon in half and wrap around the date- securing with a toothpick.

Put on a baking sheet and bake at 400 degrees for 6-8 minutes until the bacon is crisp and the dates are warmed through.

             


You can prepare these well in advance and bake them before serving. I have found the best dates are ones bought in bulk at Whole Foods or your local food co-op

Dates are low in fat, and sodium, they contain no cholesterol and are high in fiber, magnesium, iron, and potassium. They are the oldest fruit cultivated by man!
