TOMATO SALAD
Make this when the tomatoes are ripe and bursting with flavor- in Minnesota that usually means mid August to mid September 
ripe tomatoes- mixed-yellow, red, heirloom, grape
balsamic vinaigrette
fresh basil- chiffonade
goat cheese
kosher salt and fresh ground pepper


Slice the tomatoes into about 3/8 inch rounds. Lay them on a paper towel and sprinkle with salt and pepper. Let sit while you make the vinaigrette.
