TZATZIKI
Tzatziki is a Greek creamy cucumber dill sauce. Use it as a dip for crudites or a condiment for grilled meats. Don’t be scared away by the cheesecloth steps- it’s necessary to remove the liquid so the sauce stays thick. I use a coarse microplaner to grate the cucumber- it does a great job.
1 1/2 cups plain yogurt
1/2 cup sour cream
1 hot house cucumber -seeded un-peeled- coarsely grated
1 T lemon juice
1 clove garlic -minced
1 T fresh dill-minced
1 T fresh parsley minced
1 T champagne vinegar
kosher salt and fresh ground black pepper
Line 2 sieves with 2 layers of cheesecloth- place them over a bowl. Put the grated cucumber in one bowl, and the yogurt in another. Place the bowls- with sieves on top in the fridge for a few hours- for the liquid to drain.
Squeeze the remaining juice out of the cucumber. Add everything to a mixing bowl and mix well- season to taste with salt and pepper.
