Avocado Yogurt Dressing

about 1  1/2 cups

This is a nice dressing for dipping raw veggies as well as with seafood salads. Making it in the blender or food processor makes this easy breezy.

1 large ripe Haas avocado- coarse diced

1/4 cup fresh lemon juice

1  T chopped shallot

few sprigs fresh dill

1/2 cup plain yogurt

salt and pepper to taste

Add the avocado, shallot, and lemon juice to the blender and puree. Add the  yogurt and salt and pepper and combine until smooth.  Taste and adjust for seasoning- adding more yogurt or lemon,etc if necessary.
