Marinate the pork with the lemon,garlic, oregano, salt and pepper and olive oil for as little as half hour or up to a few hours.

Prepare the grill.  Thread the meat onto skewers- if you are using wooden skewers soak them in cold water for at least an hour to avoid burning. When the grill is hot, grill over direct heat turning every couple minutes until all 4 sides have a nice char. Don’t crowd them on the grill. Total cooking time depends on how hot the coals are- usually about 8-10 minutes.

To serve- place 5 or 6 pieces of meat in the middle of a warm pita- top with onions tomatoes, and lots of tzatziki.. Serve with plenty of napkins!      

1 whole pork tenderloin cut into bite sized cubes

juice of one lemon

2 cloves minced garlic

1/ 1/2 t kosher salt

1 t fresh ground black pepper

1/4 cup extra virgin olive oil

a few sprigs of fresh oregano (or 1/2 t dried)

4 pita fold breads

thin sliced sweet onion

chopped tomatoes

tzatziki sauce*

*Tzatziki can be found in most good markets- in the cooler- hanging out with the hummus or at Middle Eastern speciality food stores. It’s a cucumber yogurt sauce with fresh dill..

Souvlaki is the hamburger of Greece- the most traditional is pork that has marinaded in lemon, garlic, and oregano and then grilled- served on pita bread with chopped tomatoes and onions and topped with tzatziki .
